  • Eggs - 2 large
  • Cucumber - 50g, thinly sliced
  • Tomato - 50g, thinly sliced
  • Fresh cilantro - 10g, chopped
  • Mayonnaise - 1 tablespoon
  • Soy sauce - 1 teaspoon
  • Salt - to taste
  • Pepper - to taste
  • Cooking oil - 1 tablespoon

Steps

  1. Slice the baguette in half lengthwise, leaving one side attached to form a hinge.
  2. In a small bowl, mix mayonnaise with soy sauce and set aside.
  3. Heat cooking oil in a non-stick skillet over medium heat.
  4. Crack the eggs into the skillet and cook until the whites are set but the yolks are still runny, about 3-4 minutes. Season with salt and pepper.
  5. While the eggs are cooking, spread the mayonnaise mixture inside the baguette.
  6. Once the eggs are done, carefully place them inside the baguette on top of the mayonnaise.
  7. Layer the cucumber, tomato, and chopped cilantro on top of the eggs.
