- Cooking oil - 1 tablespoon
Steps
- Slice the baguette in half lengthwise, leaving one side attached to form a hinge.
- In a small bowl, mix mayonnaise with soy sauce and set aside.
- Heat cooking oil in a non-stick skillet over medium heat.
- Crack the eggs into the skillet and cook until the whites are set but the yolks are still runny, about 3-4 minutes. Season with salt and pepper.
- While the eggs are cooking, spread the mayonnaise mixture inside the baguette.
- Once the eggs are done, carefully place them inside the baguette on top of the mayonnaise.
- Layer the cucumber, tomato, and chopped cilantro on top of the eggs.
