Ingredients

  • Taro - 200 grams
  • Bread crumbs - 50 grams
  • Rice flour - 30 grams
  • Garlic - 2 cloves, minced
  • Green onion - 2 stalks, finely chopped
  • Soy sauce - 1 tablespoon
  • Black pepper - 1/2 teaspoon
  • Salt - 1/4 teaspoon
  • Vegetable oil - for frying
  • Baguette - 2 pieces
  • Cucumber - 1/2, sliced
  • Carrot - 1/2, julienned
  • Fresh cilantro - a handful
  • Vegan mayonnaise - 2 tablespoons
  • Chili sauce - to taste

Steps

  1. Peel and steam the taro for about 15 minutes until soft, then allow to cool slightly before mashing.
  2. In a bowl, combine the mashed taro, bread crumbs, rice flour, minced garlic, chopped green onion, soy sauce, black pepper, and salt. Mix well until a cohesive mixture forms.
  3. Shape the taro mixture into patties (about 4 cm wide) and set aside.
  4. Heat vegetable oil in a skillet over medium heat. Fry the patties for about 3-4 minutes on each side or until golden brown and crispy.
  5. While the patties are cooking, prepare the baguettes by slicing them open and spreading vegan mayonnaise inside.
  6. Once the patties are done, place one patty in each baguette, and top with cucumber slices, julienned carrot, fresh cilantro, and a drizzle of chili sauce.
