- Taro - 200 grams
- Bread crumbs - 50 grams
- Rice flour - 30 grams
- Garlic - 2 cloves, minced
- Green onion - 2 stalks, finely chopped
- Soy sauce - 1 tablespoon
- Black pepper - 1/2 teaspoon
- Salt - 1/4 teaspoon
- Vegetable oil - for frying
- Baguette - 2 pieces
- Cucumber - 1/2, sliced
- Carrot - 1/2, julienned
- Fresh cilantro - a handful
- Vegan mayonnaise - 2 tablespoons
- Chili sauce - to taste
Steps
- Peel and steam the taro for about 15 minutes until soft, then allow to cool slightly before mashing.
- In a bowl, combine the mashed taro, bread crumbs, rice flour, minced garlic, chopped green onion, soy sauce, black pepper, and salt. Mix well until a cohesive mixture forms.
- Shape the taro mixture into patties (about 4 cm wide) and set aside.
- Heat vegetable oil in a skillet over medium heat. Fry the patties for about 3-4 minutes on each side or until golden brown and crispy.
- While the patties are cooking, prepare the baguettes by slicing them open and spreading vegan mayonnaise inside.
- Once the patties are done, place one patty in each baguette, and top with cucumber slices, julienned carrot, fresh cilantro, and a drizzle of chili sauce.
