Ingredients

  • Coconut flour - 100 grams
  • Almond flour - 50 grams
  • Baking powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Eggs - 2 large
  • Unsweetened almond milk - 60 ml
  • Butter - 30 grams, melted
  • Cooked pork belly - 100 grams, sliced
  • Cucumber - 1/2, thinly sliced
  • Fresh cilantro - 20 grams
  • Jalapeños - 1, sliced (optional)
  • Mayonnaise - 2 tablespoons
  • Soy sauce - 1 tablespoon

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a mixing bowl, combine coconut flour, almond flour, baking powder, and salt.
  3. In another bowl, whisk together the eggs, almond milk, and melted butter until well combined.
  4. Pour the wet ingredients into the dry ingredients and mix until a dough forms.
  5. Divide the dough into two equal parts and shape each into a sandwich loaf on a parchment-lined baking sheet.
  6. Bake in the preheated oven for 15-20 minutes or until golden and firm to the touch.
  7. While the bread is baking, prepare the filling by slicing the cooked pork belly and vegetables.
  8. Once the bread is done, let it cool slightly before slicing it open.
  9. Spread mayonnaise inside each loaf, then layer with pork belly, cucumber, cilantro, and jalapeños.
  10. Drizzle with soy sauce before closing the sandwich and serve immediately.
