- Cooked pork belly - 100 grams, sliced
- Cucumber - 1/2, thinly sliced
- Fresh cilantro - 20 grams
- Jalapeños - 1, sliced (optional)
- Mayonnaise - 2 tablespoons
- Soy sauce - 1 tablespoon
Steps
- Preheat the oven to 180°C (350°F).
- In a mixing bowl, combine coconut flour, almond flour, baking powder, and salt.
- In another bowl, whisk together the eggs, almond milk, and melted butter until well combined.
- Pour the wet ingredients into the dry ingredients and mix until a dough forms.
- Divide the dough into two equal parts and shape each into a sandwich loaf on a parchment-lined baking sheet.
- Bake in the preheated oven for 15-20 minutes or until golden and firm to the touch.
- While the bread is baking, prepare the filling by slicing the cooked pork belly and vegetables.
- Once the bread is done, let it cool slightly before slicing it open.
- Spread mayonnaise inside each loaf, then layer with pork belly, cucumber, cilantro, and jalapeños.
- Drizzle with soy sauce before closing the sandwich and serve immediately.
