- Fresh cilantro - 1/4 cup, chopped
- Sriracha sauce - 2 teaspoons
- Mayonnaise - 2 tablespoons
- Lime - 1, juiced
- Salt - to taste
- Pepper - to taste
Steps
- In a bowl, mix soy sauce, honey, minced garlic, lime juice, salt, and pepper to create the marinade.
- Add the Halal chicken breast to the marinade, ensuring it is fully coated. Let it marinate for at least 15 minutes.
- While the chicken is marinating, prepare the vegetables by slicing the cucumber and julienning the carrot.
- Preheat a grill pan over medium-high heat. Grill the marinated chicken for about 5-7 minutes on each side or until fully cooked and slightly charred.
- Once cooked, remove the chicken from the grill and let it rest for a few minutes before slicing it into thin strips.
- To assemble the bánh mì, slice the baguettes lengthwise without cutting all the way through.
- Spread mayonnaise on one side of each baguette and add a layer of Sriracha sauce on the other side.
- Layer the grilled chicken strips inside the baguette, followed by cucumber slices, julienned carrots, and chopped cilantro.
- Close the sandwich and serve immediately, optionally with extra Sriracha on the side.
