Ingredients
- Lotus seeds - 100 grams
- Carrot - 1 medium, grated
- Zucchini - 1 medium, grated
- Mushrooms (shiitake or button) - 100 grams, finely chopped
- Garlic - 2 cloves, minced
- Fresh cilantro - 2 tablespoons, chopped
- Soy sauce - 1 tablespoon
- Cornstarch - 2 tablespoons
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Vegetable oil - 2 tablespoons (for frying)
- French baguette - 2 small
- Cucumber - 1/2, sliced thinly
- Fresh mint leaves - a handful
- Sriracha sauce - for serving (optional)
Steps
- Soak the lotus seeds in water for at least 4 hours or overnight, then drain and rinse.
- In a pot of boiling water, cook the lotus seeds for about 15 minutes or until tender. Drain and let cool.
- In a mixing bowl, mash the cooked lotus seeds with a fork until slightly chunky.
- Add grated carrot, grated zucchini, finely chopped mushrooms, minced garlic, chopped cilantro, soy sauce, cornstarch, salt, and black pepper to the mashed lotus seeds. Mix well until combined.
- Shape the mixture into 2 patties.
- Heat vegetable oil in a non-stick skillet over medium heat. Fry the patties for about 4-5 minutes on each side, until golden brown and crispy. Remove and drain on paper towels.
- Cut the baguettes in half and lightly toast them if desired.
- Assemble the bánh mì by placing a lotus seed patty in each baguette. Top with sliced cucumber and fresh mint leaves.
- Serve with sriracha sauce on the side for an added kick, if desired.
