Ingredients

  • Boneless chicken breast - 200 grams
  • Baguette - 1 large (about 150 grams)
  • Cucumber - 1/2 medium, thinly sliced
  • Carrot - 1 medium, julienned
  • Fresh cilantro - 20 grams, chopped
  • Fresh mint - 10 grams, chopped
  • Lime juice - 1 tablespoon
  • Soy sauce - 1 tablespoon
  • Olive oil - 1 teaspoon
  • Garlic - 1 clove, minced
  • Salt - to taste
  • Black pepper - to taste
  • Chili sauce - optional, for serving

Steps

  1. In a pot, bring water to a boil and add the boneless chicken breast. Cook for about 15-20 minutes until the chicken is fully cooked.
  2. Remove the chicken from the pot and let it cool slightly. Once cool, shred the chicken using two forks.
  3. In a bowl, mix the shredded chicken with lime juice, soy sauce, olive oil, minced garlic, salt, and black pepper. Set aside to marinate for 10 minutes.
  4. While the chicken is marinating, prepare the vegetables by slicing the cucumber and julienning the carrot.
  5. Slice the baguette in half lengthwise, and lightly toast it in a pan or oven until crispy.
  6. Spread the marinated chicken evenly inside the toasted baguette, then layer with cucumber, carrot, chopped cilantro, and mint.
  7. Drizzle with chili sauce if desired, close the baguette, and cut in half to serve.
