- Baguette - 1 large (about 150 grams)
- Cucumber - 1/2 medium, thinly sliced
- Carrot - 1 medium, julienned
- Fresh cilantro - 20 grams, chopped
- Fresh mint - 10 grams, chopped
- Lime juice - 1 tablespoon
- Soy sauce - 1 tablespoon
- Olive oil - 1 teaspoon
- Garlic - 1 clove, minced
- Salt - to taste
- Black pepper - to taste
- Chili sauce - optional, for serving
Steps
- In a pot, bring water to a boil and add the boneless chicken breast. Cook for about 15-20 minutes until the chicken is fully cooked.
- Remove the chicken from the pot and let it cool slightly. Once cool, shred the chicken using two forks.
- In a bowl, mix the shredded chicken with lime juice, soy sauce, olive oil, minced garlic, salt, and black pepper. Set aside to marinate for 10 minutes.
- While the chicken is marinating, prepare the vegetables by slicing the cucumber and julienning the carrot.
- Slice the baguette in half lengthwise, and lightly toast it in a pan or oven until crispy.
- Spread the marinated chicken evenly inside the toasted baguette, then layer with cucumber, carrot, chopped cilantro, and mint.
- Drizzle with chili sauce if desired, close the baguette, and cut in half to serve.
