Ingredients

  • Chicken breast - 300 grams
  • Garlic - 3 cloves, minced
  • Shallot - 1, minced
  • Soy sauce - 2 tablespoons
  • Fish sauce - 1 tablespoon
  • Brown sugar - 1 tablespoon
  • Black pepper - 1 teaspoon
  • Vegetable oil - 1 tablespoon
  • Baguette - 2 (small, about 15 cm each)
  • Cucumber - ½, thinly sliced
  • Carrot - 1, julienned
  • Daikon radish - 100 grams, julienned
  • Fresh cilantro - ½ cup, chopped
  • Fresh mint - ¼ cup, chopped
  • Mayonnaise - 2 tablespoons
  • Sriracha - 1 tablespoon

Steps

  1. In a bowl, combine minced garlic, shallot, soy sauce, fish sauce, brown sugar, black pepper, and vegetable oil to create a marinade.
  2. Add the chicken breast to the marinade, coating it well. Cover and let it marinate for at least 15 minutes.
  3. While the chicken is marinating, prepare the vegetables by slicing the cucumber, julienning the carrot and daikon, and chopping the cilantro and mint.
  4. Preheat a grill or grill pan over medium-high heat. Once hot, grill the marinated chicken for about 5-7 minutes per side, or until fully cooked and juices run clear.
  5. While the chicken is grilling, cut the baguettes in half and toast them lightly on the grill for about 1-2 minutes.
  6. Once the chicken is cooked, let it rest for a few minutes before slicing it into strips.
  7. Assemble the burger by spreading mayonnaise on both sides of the toasted baguette. Layer with sliced grilled chicken, cucumber, carrot, daikon, cilantro, and mint.
  8. Drizzle sriracha on top for added spice, and close the sandwich. Serve immediately.
