Ingredients

  • Chicken breast - 250 grams
  • Rice flour - 50 grams
  • Cornstarch - 25 grams
  • Egg - 1 large
  • Garlic powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh cilantro - 20 grams
  • Cucumber - 1 small, sliced
  • Carrot - 1 small, julienned
  • Red chili - 1 small, sliced (optional)
  • Baguette - 2 small
  • Mayonnaise - 2 tablespoons (optional)
  • Lettuce - 2 leaves

Steps

  1. Slice the chicken breast into thin fillets and season with salt, black pepper, and garlic powder.
  2. In a bowl, mix the rice flour and cornstarch. In another bowl, beat the egg.
  3. Coat each chicken fillet first in the egg, then in the flour mixture until well covered.
  4. Heat oil in a frying pan over medium heat and fry the chicken fillets for about 5-6 minutes on each side until golden brown and cooked through.
  5. While the chicken cooks, prepare the baguettes by slicing them open without cutting all the way through.
  6. Spread mayonnaise inside the baguettes if desired.
  7. Add lettuce, fried chicken, cucumber slices, julienned carrots, and fresh cilantro to each baguette.
  8. Top with sliced red chili if using, then close the baguette and serve immediately.
