- Cornstarch - 25 grams
- Egg - 1 large
- Garlic powder - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh cilantro - 20 grams
- Cucumber - 1 small, sliced
- Carrot - 1 small, julienned
- Red chili - 1 small, sliced (optional)
- Baguette - 2 small
- Mayonnaise - 2 tablespoons (optional)
- Lettuce - 2 leaves
Steps
- Slice the chicken breast into thin fillets and season with salt, black pepper, and garlic powder.
- In a bowl, mix the rice flour and cornstarch. In another bowl, beat the egg.
- Coat each chicken fillet first in the egg, then in the flour mixture until well covered.
- Heat oil in a frying pan over medium heat and fry the chicken fillets for about 5-6 minutes on each side until golden brown and cooked through.
- While the chicken cooks, prepare the baguettes by slicing them open without cutting all the way through.
- Spread mayonnaise inside the baguettes if desired.
- Add lettuce, fried chicken, cucumber slices, julienned carrots, and fresh cilantro to each baguette.
- Top with sliced red chili if using, then close the baguette and serve immediately.
