Ingredients

  • Plant-based chicken - 200 grams
  • Baguette - 2 pieces
  • Cucumber - 1/2, thinly sliced
  • Carrot - 1 medium, julienned
  • Daikon radish - 50 grams, julienned
  • Fresh cilantro - 1/4 cup, chopped
  • Fresh mint - 1/4 cup, chopped
  • Soy sauce - 2 tablespoons
  • Vegetable oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Lime juice - 1 tablespoon
  • Chili sauce - 1 teaspoon (optional)
  • Salt - to taste
  • Pepper - to taste

Steps

  1. In a bowl, mix the plant-based chicken with soy sauce, vegetable oil, minced garlic, lime juice, salt, and pepper. Let it marinate for at least 15 minutes.
  2. Heat a grill pan over medium heat. Grill the marinated plant-based chicken for about 5-7 minutes on each side until it's golden and cooked through.
  3. While the chicken is grilling, prepare the vegetables. In a separate bowl, mix the julienned carrot and daikon radish with a pinch of salt and let it sit for 5 minutes.
  4. Slice the baguette lengthwise, making sure not to cut all the way through. Toast lightly on the grill or in a toaster until crispy.
  5. Once the plant-based chicken is ready, place it inside the toasted baguette. Top with cucumber slices, pickled carrot and daikon, fresh cilantro, and mint.
  6. Drizzle with chili sauce if using, close the baguette, and serve immediately.
