- Fresh ginger - 1 teaspoon, grated
- Fresh mango - 1 medium, sliced
- Cucumber - 1 small, thinly sliced
- Fresh cilantro - 1/4 cup, chopped
- Red chili - 1, thinly sliced (optional)
- Baguette - 2 small
- Pickled carrots - 1/2 cup
- Vegan mayonnaise - 2 tablespoons
- Lime juice - 1 tablespoon
Steps
- Press the tofu to remove excess moisture, then cut it into thick slices.
- In a bowl, mix soy sauce, sesame oil, minced garlic, and grated ginger to create a marinade. Add the tofu slices and let them marinate for at least 15 minutes.
- While the tofu is marinating, prepare the pickled carrots by mixing them with lime juice, a pinch of salt, and letting them sit for 10 minutes.
- Heat a non-stick skillet over medium heat and grill the marinated tofu slices for about 5-7 minutes on each side until golden brown.
- Slice the baguettes lengthwise without cutting all the way through, and lightly toast them if desired.
- Spread vegan mayonnaise inside each baguette, then layer with grilled tofu, fresh mango slices, cucumber, pickled carrots, cilantro, and red chili if using.
- Close the baguette and serve immediately, enjoying the fresh flavors.
