- Carrot - 1 medium, julienned
- Radish - 50 grams, thinly sliced
- Fresh cilantro - 20 grams, roughly chopped
- Vegan mayonnaise - 2 tablespoons
- Soy sauce - 1 tablespoon
- Lime juice - 1 tablespoon
- Garlic - 2 cloves, minced
- Vegetable oil - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Chili sauce - optional, for serving
Steps
- In a bowl, combine plant-based shrimp, soy sauce, lime juice, minced garlic, salt, and pepper. Let marinate for at least 10 minutes.
- Heat vegetable oil in a skillet over medium heat. Add the marinated plant-based shrimp and cook for about 5-7 minutes until heated through and slightly crispy.
- While the shrimp are cooking, prepare the baguettes by slicing them open lengthwise, being careful not to cut all the way through.
- Spread 1 tablespoon of vegan mayonnaise inside each baguette.
- Layer the cooked plant-based shrimp evenly on the bottom of each baguette.
- Top the shrimp with sliced cucumber, julienned carrot, sliced radish, and fresh cilantro.
- If desired, drizzle with chili sauce for added heat, then close the baguette.
