- Lotus seeds - 100 grams
- Carrot - 1 medium, grated
- Cucumber - 1 small, thinly sliced
- Fresh cilantro - 20 grams, chopped
- Fresh mint - 10 grams, chopped
- Vegan mayonnaise - 2 tablespoons
- Soy sauce - 1 tablespoon
- Baguette - 2 small
- Lettuce leaves - 4 leaves
- Chili sauce - to taste
- Vegetable oil - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
Steps
- Soak the lotus seeds in water for 4 hours or overnight. Drain and rinse well.
- In a pot, add the soaked lotus seeds and cover with water. Bring to a boil, then reduce to a simmer and cook for 15-20 minutes until tender. Drain and let cool.
- In a bowl, combine the cooked lotus seeds, grated carrot, chopped cilantro, and mint. Season with soy sauce, salt, and black pepper. Mix well to combine.
- In a skillet, heat the vegetable oil over medium heat. Add the lotus seed mixture and sauté for about 5 minutes until heated through.
- Slice the baguettes in half lengthwise and lightly toast them if desired.
- Spread a tablespoon of vegan mayonnaise on each half of the baguette.
- Layer the sautéed lotus seed mixture, lettuce leaves, and cucumber slices onto the bottom half of each baguette.
- Drizzle with chili sauce to taste, then close the sandwiches with the top half of the baguette.
