Ingredients

  • Lotus seeds - 100 grams
  • Carrot - 1 medium, grated
  • Cucumber - 1 small, thinly sliced
  • Fresh cilantro - 20 grams, chopped
  • Fresh mint - 10 grams, chopped
  • Vegan mayonnaise - 2 tablespoons
  • Soy sauce - 1 tablespoon
  • Baguette - 2 small
  • Lettuce leaves - 4 leaves
  • Chili sauce - to taste
  • Vegetable oil - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Soak the lotus seeds in water for 4 hours or overnight. Drain and rinse well.
  2. In a pot, add the soaked lotus seeds and cover with water. Bring to a boil, then reduce to a simmer and cook for 15-20 minutes until tender. Drain and let cool.
  3. In a bowl, combine the cooked lotus seeds, grated carrot, chopped cilantro, and mint. Season with soy sauce, salt, and black pepper. Mix well to combine.
  4. In a skillet, heat the vegetable oil over medium heat. Add the lotus seed mixture and sauté for about 5 minutes until heated through.
  5. Slice the baguettes in half lengthwise and lightly toast them if desired.
  6. Spread a tablespoon of vegan mayonnaise on each half of the baguette.
  7. Layer the sautéed lotus seed mixture, lettuce leaves, and cucumber slices onto the bottom half of each baguette.
  8. Drizzle with chili sauce to taste, then close the sandwiches with the top half of the baguette.
