Ingredients
- Baguette - 2 pieces
- Firm tofu - 200 grams
- Soy sauce - 2 tablespoons
- Vegetable oil - 1 tablespoon
- Garlic - 2 cloves, minced
- Carrot - 1 medium, julienned
- Cucumber - 1 small, sliced
- Fresh cilantro - 1/4 cup, chopped
- Mint leaves - 1/4 cup, chopped
- Pickled daikon radish - 1/4 cup
- Sriracha sauce - to taste
- Vegan mayonnaise - 2 tablespoons
- Black pepper - to taste
- Lime - 1, cut into wedges
Steps
- Press the tofu to remove excess moisture and cut it into thin slices.
- In a bowl, mix soy sauce, garlic, and black pepper. Add the tofu slices and marinate for at least 15 minutes.
- Heat vegetable oil in a pan over medium heat. Cook the marinated tofu slices until golden brown on both sides, about 4-5 minutes per side.
- While the tofu is cooking, prepare the vegetables: julienne the carrot, slice the cucumber, and chop the cilantro and mint.
- Cut the baguettes in half and lightly toast them if desired.
- Spread vegan mayonnaise on both sides of the baguette.
- Layer the cooked tofu, julienned carrots, cucumber slices, pickled daikon, cilantro, and mint inside the baguette.
- Drizzle Sriracha sauce on top as per your taste.
- Serve with lime wedges on the side for an extra zesty flavor.
