Ingredients

  • Baguette - 2 pieces
  • Textured vegetable protein (TVP) - 100 grams
  • Vegetable broth - 200 ml
  • Soy sauce - 2 tablespoons
  • Garlic powder - 1 teaspoon
  • Onion powder - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Cornstarch - 2 tablespoons
  • Vegan mayonnaise - 2 tablespoons
  • Cucumber - 1, thinly sliced
  • Carrot - 1, julienned
  • Fresh cilantro - 1/4 cup, chopped
  • Fresh mint - 1/4 cup, chopped
  • Lime - 1, juiced
  • Sriracha sauce - 1 tablespoon
  • Salt - to taste

Steps

  1. In a bowl, combine the textured vegetable protein (TVP) with vegetable broth, soy sauce, garlic powder, onion powder, and black pepper. Let it soak for about 10 minutes until the TVP absorbs the liquid.
  2. Once the TVP is hydrated, add cornstarch and mix well until it forms a dough-like consistency. Shape the mixture into small meatballs, about the size of a golf ball.
  3. Heat a non-stick skillet over medium heat and add a little oil. Cook the meatballs for about 5-7 minutes, turning occasionally until they are golden brown on all sides.
  4. While the meatballs are cooking, prepare the baguettes by cutting them in half lengthwise without cutting all the way through. Toast them lightly in a toaster or on a pan until crispy.
  5. Spread a tablespoon of vegan mayonnaise inside each baguette. Place 2-3 meatballs in each baguette.
  6. Top the meatballs with sliced cucumber, julienned carrots, and chopped cilantro and mint. Drizzle with lime juice and sriracha sauce.
  7. Close the baguettes and serve immediately, enjoying the fresh flavors and textures.
