Steps
- Preheat your oven to 200°C (400°F).
- In a mixing bowl, combine the almond flour, baking powder, salt, pepper, and shredded cheddar cheese.
- In a separate bowl, whisk the eggs and then add them to the dry mixture. Stir until a dough forms.
- Heat the olive oil in a skillet over medium heat. Press the dough into the skillet to form a flat base, about 1 cm thick, and cook for 5-7 minutes until the bottom is golden brown.
- Carefully flip the dough using a spatula and cook for another 3-5 minutes until both sides are golden.
- Top the cooked base with shredded chicken, diced bell pepper, and sliced red onion evenly.
- Drizzle soy sauce over the toppings and return the skillet to the oven for 10-15 minutes, or until the vegetables are tender and slightly charred.
- Remove from the oven, garnish with chopped cilantro, and drizzle with sriracha if desired. Serve hot.
