  • Cooked chicken breast, shredded - 100 grams
  • Bell pepper, diced - 50 grams
  • Red onion, thinly sliced - 30 grams
  • Fresh cilantro, chopped - 2 tablespoons
  • Soy sauce (or tamari for gluten-free) - 1 tablespoon
  • Sriracha (optional) - to taste

Steps

  1. Preheat your oven to 200°C (400°F).
  2. In a mixing bowl, combine the almond flour, baking powder, salt, pepper, and shredded cheddar cheese.
  3. In a separate bowl, whisk the eggs and then add them to the dry mixture. Stir until a dough forms.
  4. Heat the olive oil in a skillet over medium heat. Press the dough into the skillet to form a flat base, about 1 cm thick, and cook for 5-7 minutes until the bottom is golden brown.
  5. Carefully flip the dough using a spatula and cook for another 3-5 minutes until both sides are golden.
  6. Top the cooked base with shredded chicken, diced bell pepper, and sliced red onion evenly.
  7. Drizzle soy sauce over the toppings and return the skillet to the oven for 10-15 minutes, or until the vegetables are tender and slightly charred.
  8. Remove from the oven, garnish with chopped cilantro, and drizzle with sriracha if desired. Serve hot.
