  • Ginger - 1 teaspoon, grated
  • Soy sauce - 1 tablespoon
  • Ground black pepper - 1/2 teaspoon
  • Coriander powder - 1/2 teaspoon
  • Cumin powder - 1/2 teaspoon
  • Olive oil - 2 tablespoons
  • Baguette - 2 pieces
  • Cucumber - 1 small, sliced
  • Fresh cilantro - 1/4 cup, chopped
  • Pickled carrots - 1/4 cup
  • Lettuce leaves - 2

Steps

  1. In a mixing bowl, combine grated carrots, chickpea flour, green onion, minced garlic, grated ginger, soy sauce, black pepper, coriander powder, and cumin powder. Mix well until all ingredients are evenly combined.
  2. Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat. Form the carrot mixture into two patties and cook them in the skillet for about 4-5 minutes on each side until golden brown and crispy.
  3. While the patties are cooking, slice the baguettes in half and lightly toast them if desired.
  4. Assemble the bánh mì by placing a lettuce leaf on the bottom half of each baguette, followed by a carrot patty, some cucumber slices, pickled carrots, and a sprinkle of fresh cilantro.
  5. Top with the other half of the baguette, slice in half if desired, and serve immediately.
