- Ginger - 1 teaspoon, grated
- Soy sauce - 1 tablespoon
- Ground black pepper - 1/2 teaspoon
- Coriander powder - 1/2 teaspoon
- Cumin powder - 1/2 teaspoon
- Olive oil - 2 tablespoons
- Baguette - 2 pieces
- Cucumber - 1 small, sliced
- Fresh cilantro - 1/4 cup, chopped
- Pickled carrots - 1/4 cup
- Lettuce leaves - 2
Steps
- In a mixing bowl, combine grated carrots, chickpea flour, green onion, minced garlic, grated ginger, soy sauce, black pepper, coriander powder, and cumin powder. Mix well until all ingredients are evenly combined.
- Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat. Form the carrot mixture into two patties and cook them in the skillet for about 4-5 minutes on each side until golden brown and crispy.
- While the patties are cooking, slice the baguettes in half and lightly toast them if desired.
- Assemble the bánh mì by placing a lettuce leaf on the bottom half of each baguette, followed by a carrot patty, some cucumber slices, pickled carrots, and a sprinkle of fresh cilantro.
- Top with the other half of the baguette, slice in half if desired, and serve immediately.
