Ingredients

  • French baguette - 2 pieces
  • Chicken breast (halal) - 150 grams, cooked and sliced
  • Pork belly (halal) - 100 grams, cooked and sliced
  • Liver pâté - 50 grams
  • Cucumber - 1 small, thinly sliced
  • Carrot - 1 small, julienned
  • Daikon radish - 50 grams, julienned
  • Fresh cilantro - 1/4 cup, chopped
  • Jalapeño pepper - 1 small, thinly sliced
  • Mayonnaise - 2 tablespoons
  • Soy sauce - 1 tablespoon
  • Salt - 1/4 teaspoon
  • Black pepper - 1/4 teaspoon
  • Vinegar - 1 tablespoon (for pickling carrots and daikon)

Steps

  1. Prepare the pickled carrots and daikon by mixing them with vinegar, salt, and sugar in a bowl. Let them sit for at least 15 minutes.
  2. While the vegetables are pickling, slice the cooked chicken breast and pork belly into thin pieces.
  3. Slice the baguettes lengthwise without cutting all the way through, creating a pocket.
  4. Spread a layer of liver pâté on one side of each baguette, and mayonnaise on the other side.
  5. Layer the sliced chicken and pork belly inside the baguette, followed by the pickled carrots and daikon.
  6. Add cucumber slices, fresh cilantro, and jalapeño pepper to the sandwich.
  7. Drizzle a little soy sauce inside for added flavor, and season with black pepper.
  8. Close the baguettes gently and serve immediately, or wrap them in parchment paper to enjoy later.
