Ingredients

  • Rice flour - 100g
  • Turmeric powder - 1 tsp
  • Coconut milk - 200ml
  • Water - 100ml
  • Salt - 1/2 tsp
  • Vegetable oil - for frying
  • Mushrooms (shiitake or button) - 100g, sliced
  • Bean sprouts - 100g
  • Carrot - 1 medium, julienned
  • Cucumber - 1/2, sliced
  • Fresh cilantro - 1/4 cup, chopped
  • Fresh mint - 1/4 cup, chopped
  • Vegan mayonnaise - 2 tbsp
  • Bánh mì baguette - 2 small
  • Sriracha sauce - to taste

Steps

  1. In a bowl, mix the rice flour, turmeric powder, coconut milk, water, and salt until well combined to create a smooth batter. Let it rest for 10 minutes.
  2. Heat a non-stick skillet over medium heat and add a little vegetable oil. Pour a ladle of the batter into the skillet, swirling it to form a thin pancake. Cook for about 2-3 minutes until the edges lift and the bottom is golden brown, then flip and cook for another 1-2 minutes. Repeat with the remaining batter.
  3. In the same skillet, add a bit more oil and sauté the sliced mushrooms for about 3-4 minutes until softened. Remove from heat.
  4. To assemble the burgers, slice the bánh mì baguettes in half lengthwise. Spread vegan mayonnaise on both sides of the bread.
  5. Layer the sautéed mushrooms, bean sprouts, julienned carrots, cucumber slices, chopped cilantro, and mint inside the baguettes.
  6. Top with the crispy rice pancakes and drizzle with sriracha sauce to taste. Close the baguettes and serve immediately.
