- Rice flour - 100g
- Turmeric powder - 1 tsp
- Coconut milk - 200ml
- Water - 100ml
- Salt - 1/2 tsp
- Vegetable oil - for frying
- Mushrooms (shiitake or button) - 100g, sliced
- Bean sprouts - 100g
- Carrot - 1 medium, julienned
- Cucumber - 1/2, sliced
- Fresh cilantro - 1/4 cup, chopped
- Fresh mint - 1/4 cup, chopped
- Vegan mayonnaise - 2 tbsp
- Bánh mì baguette - 2 small
- Sriracha sauce - to taste
Steps
- In a bowl, mix the rice flour, turmeric powder, coconut milk, water, and salt until well combined to create a smooth batter. Let it rest for 10 minutes.
- Heat a non-stick skillet over medium heat and add a little vegetable oil. Pour a ladle of the batter into the skillet, swirling it to form a thin pancake. Cook for about 2-3 minutes until the edges lift and the bottom is golden brown, then flip and cook for another 1-2 minutes. Repeat with the remaining batter.
- In the same skillet, add a bit more oil and sauté the sliced mushrooms for about 3-4 minutes until softened. Remove from heat.
- To assemble the burgers, slice the bánh mì baguettes in half lengthwise. Spread vegan mayonnaise on both sides of the bread.
- Layer the sautéed mushrooms, bean sprouts, julienned carrots, cucumber slices, chopped cilantro, and mint inside the baguettes.
- Top with the crispy rice pancakes and drizzle with sriracha sauce to taste. Close the baguettes and serve immediately.
