Ingredients

  • Sweet potatoes - 200 grams
  • Rice flour - 50 grams
  • Cornstarch - 30 grams
  • Green onions - 2 stalks, finely chopped
  • Garlic - 2 cloves, minced
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Vegetable oil - 100 ml (for frying)
  • French baguette - 2 small
  • Cucumber - 1/2, thinly sliced
  • Carrots - 50 grams, julienned
  • Fresh cilantro - a handful
  • Vegan mayonnaise - 2 tablespoons
  • Soy sauce - 1 tablespoon
  • Lime juice - 1 tablespoon

Steps

  1. Peel and boil the sweet potatoes in salted water for about 15 minutes until tender. Drain and let cool slightly.
  2. In a mixing bowl, mash the sweet potatoes and add rice flour, cornstarch, chopped green onions, minced garlic, salt, and black pepper. Mix until well combined.
  3. Form the mixture into small patties, about 1 cm thick.
  4. Heat vegetable oil in a frying pan over medium heat. Fry the patties for about 3-4 minutes on each side until golden and crispy. Remove and drain on paper towels.
  5. While the patties are frying, prepare the sauce by mixing vegan mayonnaise, soy sauce, and lime juice in a small bowl.
  6. Slice the French baguettes lengthwise, leaving one side intact. Spread the sauce inside each baguette.
  7. Layer the fried sweet potato patties, cucumber slices, julienned carrots, and fresh cilantro inside the baguette.
