- Sweet potatoes - 200 grams
- Rice flour - 50 grams
- Cornstarch - 30 grams
- Green onions - 2 stalks, finely chopped
- Garlic - 2 cloves, minced
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Vegetable oil - 100 ml (for frying)
- French baguette - 2 small
- Cucumber - 1/2, thinly sliced
- Carrots - 50 grams, julienned
- Fresh cilantro - a handful
- Vegan mayonnaise - 2 tablespoons
- Soy sauce - 1 tablespoon
- Lime juice - 1 tablespoon
Steps
- Peel and boil the sweet potatoes in salted water for about 15 minutes until tender. Drain and let cool slightly.
- In a mixing bowl, mash the sweet potatoes and add rice flour, cornstarch, chopped green onions, minced garlic, salt, and black pepper. Mix until well combined.
- Form the mixture into small patties, about 1 cm thick.
- Heat vegetable oil in a frying pan over medium heat. Fry the patties for about 3-4 minutes on each side until golden and crispy. Remove and drain on paper towels.
- While the patties are frying, prepare the sauce by mixing vegan mayonnaise, soy sauce, and lime juice in a small bowl.
- Slice the French baguettes lengthwise, leaving one side intact. Spread the sauce inside each baguette.
- Layer the fried sweet potato patties, cucumber slices, julienned carrots, and fresh cilantro inside the baguette.
