- Brown sugar - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Vegetable oil - 1 tablespoon
- Baguette - 2 small
- Cucumber - 1/2, thinly sliced
- Carrot - 1/2, julienned
- Fresh cilantro - 1/4 cup, chopped
- Fresh mint - 1/4 cup, chopped
- Chili pepper - 1, sliced (optional)
- Mayonnaise - 2 tablespoons (optional)
- Lime - 1, cut into wedges for serving
Steps
- In a bowl, combine the beef, lemongrass, garlic, shallot, fish sauce, soy sauce, brown sugar, black pepper, and vegetable oil. Mix well and marinate for at least 15 minutes.
- Preheat a grill or grill pan over medium-high heat.
- Thread the marinated beef onto skewers (if using wooden skewers, soak them in water for 30 minutes beforehand).
- Grill the beef skewers for about 3-4 minutes on each side or until cooked to your desired doneness.
- While the beef is grilling, prepare the baguettes by slicing them open lengthwise, but not all the way through.
- Spread mayonnaise inside the baguettes if desired, then layer in the cucumber, carrot, grilled beef, cilantro, and mint.
- Top with sliced chili pepper if you like some heat.
- Serve with lime wedges on the side to squeeze over the top.
