  • Brown sugar - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Vegetable oil - 1 tablespoon
  • Baguette - 2 small
  • Cucumber - 1/2, thinly sliced
  • Carrot - 1/2, julienned
  • Fresh cilantro - 1/4 cup, chopped
  • Fresh mint - 1/4 cup, chopped
  • Chili pepper - 1, sliced (optional)
  • Mayonnaise - 2 tablespoons (optional)
  • Lime - 1, cut into wedges for serving

Steps

  1. In a bowl, combine the beef, lemongrass, garlic, shallot, fish sauce, soy sauce, brown sugar, black pepper, and vegetable oil. Mix well and marinate for at least 15 minutes.
  2. Preheat a grill or grill pan over medium-high heat.
  3. Thread the marinated beef onto skewers (if using wooden skewers, soak them in water for 30 minutes beforehand).
  4. Grill the beef skewers for about 3-4 minutes on each side or until cooked to your desired doneness.
  5. While the beef is grilling, prepare the baguettes by slicing them open lengthwise, but not all the way through.
  6. Spread mayonnaise inside the baguettes if desired, then layer in the cucumber, carrot, grilled beef, cilantro, and mint.
  7. Top with sliced chili pepper if you like some heat.
  8. Serve with lime wedges on the side to squeeze over the top.
