- Baguette - 2 pieces
- King oyster mushrooms - 200 grams, sliced
- Carrots - 1 medium, julienned
- Daikon radish - 100 grams, julienned
- Soy sauce - 2 tablespoons
- Vegetable broth - 200 ml
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Star anise - 1 piece
- Cinnamon stick - 1 piece
- Sugar - 1 teaspoon
- Fresh cilantro - a handful, for garnish
- Fresh mint - a handful, for garnish
- Lime - 1, cut into wedges
- Chili sauce - to taste (optional)
Steps
- In a medium pot, heat a tablespoon of oil over medium heat. Add minced garlic and grated ginger, sautéing until fragrant.
- Add sliced king oyster mushrooms and stir-fry for about 5 minutes until they start to soften.
- Pour in the vegetable broth and soy sauce, then add star anise, cinnamon stick, and sugar. Bring to a simmer and cook for 10-15 minutes until the mushrooms are tender and the sauce thickens slightly.
- While the mushroom mixture cooks, prepare the pickled vegetables by mixing the julienned carrots and daikon radish in a bowl with a little vinegar and sugar. Let them marinate for about 10 minutes.
- Once the mushroom filling is ready, remove the star anise and cinnamon stick. Adjust seasoning if needed.
- Toast the baguettes in the oven for about 5 minutes until crispy.
- Assemble the Bánh Mì by filling each baguette with mushroom filling, top with the pickled vegetables, fresh cilantro, and mint. Serve with lime wedges and chili sauce on the side.
