Ingredients

  • Baguette - 1 (about 200g)
  • Avocado - 1 medium (about 150g)
  • Lime juice - 1 tablespoon (15ml)
  • Soy sauce - 1 teaspoon (5ml)
  • Cilantro - 2 tablespoons, chopped
  • Cucumber - 1/2 medium, thinly sliced
  • Carrot - 1/2 medium, julienned
  • Radish - 2, thinly sliced
  • Jalapeño - 1 small, thinly sliced
  • Coconut oil - 1 tablespoon (15ml)
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Cut the baguette in half lengthwise, leaving one side attached to create a hinge.
  2. In a bowl, mash the avocado with lime juice, soy sauce, salt, and pepper until smooth.
  3. Spread the avocado mixture evenly inside both halves of the baguette.
  4. Heat coconut oil in a skillet over medium heat and lightly toast the inside of the baguette until golden brown.
  5. Layer the cucumber slices, carrot, radish, jalapeño, and cilantro inside the baguette.
  6. Close the sandwich and press gently to hold the ingredients together.
  7. Cut the Bánh Mì Bơ in half and serve immediately.
