- Baguette - 1 (about 200g)
- Avocado - 1 medium (about 150g)
- Lime juice - 1 tablespoon (15ml)
- Soy sauce - 1 teaspoon (5ml)
- Cilantro - 2 tablespoons, chopped
- Cucumber - 1/2 medium, thinly sliced
- Carrot - 1/2 medium, julienned
- Radish - 2, thinly sliced
- Jalapeño - 1 small, thinly sliced
- Coconut oil - 1 tablespoon (15ml)
- Salt - to taste
- Black pepper - to taste
Steps
- Cut the baguette in half lengthwise, leaving one side attached to create a hinge.
- In a bowl, mash the avocado with lime juice, soy sauce, salt, and pepper until smooth.
- Spread the avocado mixture evenly inside both halves of the baguette.
- Heat coconut oil in a skillet over medium heat and lightly toast the inside of the baguette until golden brown.
- Layer the cucumber slices, carrot, radish, jalapeño, and cilantro inside the baguette.
- Close the sandwich and press gently to hold the ingredients together.
- Cut the Bánh Mì Bơ in half and serve immediately.
