  • Kosher mayonnaise - 2 tablespoons
  • Pickled carrots - 50g
  • Pickled daikon - 50g
  • Cucumber - 1/2, thinly sliced
  • Fresh cilantro - a handful
  • Jalapeño - 1, sliced (optional)
  • Soy sauce - 1 teaspoon
  • Salt - to taste
  • Pepper - to taste

Steps

  1. Prepare the pickled carrots and daikon by mixing equal parts of vinegar, sugar, and water, and letting them sit for at least 15 minutes.
  2. Cook the kosher chicken breast by boiling or grilling it until fully cooked, then shred it into bite-sized pieces.
  3. Mix the shredded chicken with soy sauce, salt, and pepper to taste.
  4. Slice the baguette in half lengthwise, leaving one side attached to create a hinge.
  5. Spread kosher mayonnaise generously on both sides of the baguette.
  6. Layer the shredded chicken evenly on the bottom half of the baguette.
  7. Add pickled carrots, pickled daikon, cucumber slices, cilantro, and jalapeño (if using) on top of the chicken.
  8. Close the baguette, slice it in half, and serve immediately.
