- Bell pepper (sliced) - 50 grams
- Red onion (sliced) - 30 grams
- Olive oil - 1 tablespoon
- Fresh cilantro (chopped) - 10 grams
- Chili flakes (optional) - 1/2 teaspoon
Steps
- Preheat the oven to 200°C (400°F).
- In a large bowl, mix cassava flour, eggs, coconut milk, baking powder, salt, and black pepper until smooth to create the base batter.
- Grease a baking sheet or pizza pan with olive oil and pour the batter onto it, spreading it evenly to form a pizza base.
- Bake the cassava base in the preheated oven for 15 minutes or until it starts to firm up and turn golden.
- While the base is baking, prepare the toppings by mixing shredded chicken, sliced bell pepper, sliced red onion, and half of the mozzarella cheese in a bowl.
- Once the base is ready, remove it from the oven and evenly distribute the chicken and vegetable mixture on top.
- Sprinkle the remaining mozzarella cheese over the toppings and add chili flakes if desired.
- Return the pizza to the oven and bake for an additional 10-12 minutes, or until the cheese is melted and bubbly.
- Remove from the oven, garnish with chopped fresh cilantro, slice, and serve warm.
