  • Cooked shredded chicken breast - 100 grams
  • Mozzarella cheese - 100 grams
  • Bell pepper (sliced) - 50 grams
  • Red onion (sliced) - 30 grams
  • Olive oil - 1 tablespoon
  • Fresh cilantro (chopped) - 10 grams
  • Chili flakes (optional) - 1/2 teaspoon

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a large bowl, mix cassava flour, eggs, coconut milk, baking powder, salt, and black pepper until smooth to create the base batter.
  3. Grease a baking sheet or pizza pan with olive oil and pour the batter onto it, spreading it evenly to form a pizza base.
  4. Bake the cassava base in the preheated oven for 15 minutes or until it starts to firm up and turn golden.
  5. While the base is baking, prepare the toppings by mixing shredded chicken, sliced bell pepper, sliced red onion, and half of the mozzarella cheese in a bowl.
  6. Once the base is ready, remove it from the oven and evenly distribute the chicken and vegetable mixture on top.
  7. Sprinkle the remaining mozzarella cheese over the toppings and add chili flakes if desired.
  8. Return the pizza to the oven and bake for an additional 10-12 minutes, or until the cheese is melted and bubbly.
  9. Remove from the oven, garnish with chopped fresh cilantro, slice, and serve warm.
