- Tapioca starch - 50 grams
- Coconut milk - 200 ml
- Water - 100 ml
- Eggs - 2 large
- Cooked shrimp - 100 grams, chopped
- Cooked chicken breast - 100 grams, shredded
- Green onions - 2, finely chopped
- Fish sauce - 1 tablespoon
- Sugar - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh herbs (mint, cilantro) - for garnish
Steps
- In a mixing bowl, combine the rice flour, tapioca starch, coconut milk, water, eggs, fish sauce, sugar, salt, and black pepper. Whisk until smooth and set aside to rest for 10 minutes.
- Preheat a non-stick skillet or a bánh khọt pan over medium heat. Lightly grease with oil.
- Pour a small amount of the batter into each mold or section of the skillet, filling it about halfway. Cook for 2-3 minutes until the edges start to crisp.
- Evenly distribute the chopped shrimp and shredded chicken on top of the batter in each mold.
- Cover the skillet with a lid and cook for an additional 3-5 minutes until the proteins are heated through and the batter is set.
- Remove from heat and garnish with chopped green onions and fresh herbs before serving.
