Ingredients

  • Rice flour - 100 grams
  • Tapioca starch - 50 grams
  • Coconut milk - 200 ml
  • Water - 100 ml
  • Eggs - 2 large
  • Cooked shrimp - 100 grams, chopped
  • Cooked chicken breast - 100 grams, shredded
  • Green onions - 2, finely chopped
  • Fish sauce - 1 tablespoon
  • Sugar - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh herbs (mint, cilantro) - for garnish

Steps

  1. In a mixing bowl, combine the rice flour, tapioca starch, coconut milk, water, eggs, fish sauce, sugar, salt, and black pepper. Whisk until smooth and set aside to rest for 10 minutes.
  2. Preheat a non-stick skillet or a bánh khọt pan over medium heat. Lightly grease with oil.
  3. Pour a small amount of the batter into each mold or section of the skillet, filling it about halfway. Cook for 2-3 minutes until the edges start to crisp.
  4. Evenly distribute the chopped shrimp and shredded chicken on top of the batter in each mold.
  5. Cover the skillet with a lid and cook for an additional 3-5 minutes until the proteins are heated through and the batter is set.
  6. Remove from heat and garnish with chopped green onions and fresh herbs before serving.
