Ingredients

  • Coconut flour - 60 grams
  • Arrowroot powder - 30 grams
  • Coconut milk - 200 ml
  • Eggs - 2 large
  • Shrimp, peeled and deveined - 200 grams
  • Garlic, minced - 2 cloves
  • Fish sauce - 1 tablespoon
  • Lime juice - 1 tablespoon
  • Cilantro, chopped - 2 tablespoons
  • Green onions, chopped - 2 tablespoons
  • Lettuce leaves - 4 large
  • Sliced cucumber - 100 grams
  • Red chili, sliced - 1 (optional)
  • Salt - to taste
  • Pepper - to taste
  • Coconut oil - for frying

Steps

  1. In a mixing bowl, combine coconut flour, arrowroot powder, and a pinch of salt.
  2. In another bowl, whisk together coconut milk and eggs until smooth.
  3. Gradually add the egg mixture to the dry ingredients, stirring until well combined.
  4. Heat a non-stick skillet over medium heat and add a bit of coconut oil.
  5. Pour small amounts of the batter into the skillet, forming pancake shapes (about 10 cm in diameter) and cook until golden brown on both sides. Repeat until all batter is used.
  6. In a separate bowl, combine shrimp, minced garlic, fish sauce, lime juice, chopped cilantro, and green onions. Season with salt and pepper to taste.
  7. Heat a little coconut oil in a pan and sauté the shrimp mixture until the shrimp are pink and cooked through, about 3-4 minutes.
  8. To assemble the burgers, place a coconut pancake on a plate, top with sautéed shrimp, lettuce leaves, cucumber slices, and chili if using. Finish with another pancake on top.
