  • Pork shoulder (sliced thin) - 250 grams
  • Garlic (minced) - 3 cloves
  • Shallots (finely chopped) - 2 tablespoons
  • Fish sauce - 3 tablespoons
  • Brown sugar - 1 tablespoon
  • Black pepper - 1 teaspoon
  • Lemongrass (finely chopped) - 1 stalk
  • Vegetable oil - 1 tablespoon
  • Fresh mint leaves - 1/4 cup
  • Fresh cilantro - 1/4 cup
  • Lime (cut into wedges) - 1
  • Cucumber (sliced) - 1/2
  • Crushed peanuts (for garnish) - 2 tablespoons
  • Chili sauce (optional) - to taste

Steps

  1. Soak the rice vermicelli noodles in warm water for about 15 minutes until softened, then drain and set aside.
  2. In a bowl, mix together minced garlic, chopped shallots, fish sauce, brown sugar, black pepper, and lemongrass to create a marinade.
  3. Add the sliced pork to the marinade, ensuring all pieces are well coated. Let it marinate for at least 10 minutes.
  4. Preheat a grill or a grill pan over medium-high heat and brush with vegetable oil.
  5. Grill the marinated pork slices for about 4-5 minutes on each side until fully cooked and slightly charred.
  6. While the pork is grilling, prepare the serving plates by placing a bed of rice vermicelli noodles.
  7. Once the pork is cooked, arrange it over the noodles.
  8. Garnish with fresh mint leaves, cilantro, cucumber slices, and crushed peanuts.
  9. Serve with lime wedges and chili sauce on the side for added flavor.
