Ingredients
- Coconut milk - 200 ml
- Eggs - 2 large
- Honey - 30 grams
- Vanilla extract - 1 teaspoon
- Salt - a pinch
- Water - 100 ml (for caramel)
- Brown sugar - 50 grams (for caramel)
Steps
- Preheat your oven to 160°C (320°F).
- In a small saucepan, combine the brown sugar and water over medium heat to make the caramel. Stir until the sugar dissolves and turns a golden brown color. Quickly pour the caramel into the bottom of two ramekins and let it cool.
- In a mixing bowl, whisk together the eggs, honey, coconut milk, vanilla extract, and a pinch of salt until smooth.
- Pour the egg mixture into the prepared ramekins over the cooled caramel.
- Place the ramekins in a baking dish and fill the dish with hot water until it reaches halfway up the sides of the ramekins.
- Bake in the preheated oven for about 25-30 minutes, or until the custard is set but still slightly jiggly in the center.
- Remove the ramekins from the water bath and let them cool to room temperature, then refrigerate for at least 2 hours before serving.
- To serve, run a knife around the edge of the ramekin and invert onto a plate to release the flan.
