Ingredients

  • Coconut milk - 200 ml
  • Eggs - 2 large
  • Honey - 30 grams
  • Vanilla extract - 1 teaspoon
  • Salt - a pinch
  • Water - 100 ml (for caramel)
  • Brown sugar - 50 grams (for caramel)

Steps

  1. Preheat your oven to 160°C (320°F).
  2. In a small saucepan, combine the brown sugar and water over medium heat to make the caramel. Stir until the sugar dissolves and turns a golden brown color. Quickly pour the caramel into the bottom of two ramekins and let it cool.
  3. In a mixing bowl, whisk together the eggs, honey, coconut milk, vanilla extract, and a pinch of salt until smooth.
  4. Pour the egg mixture into the prepared ramekins over the cooled caramel.
  5. Place the ramekins in a baking dish and fill the dish with hot water until it reaches halfway up the sides of the ramekins.
  6. Bake in the preheated oven for about 25-30 minutes, or until the custard is set but still slightly jiggly in the center.
  7. Remove the ramekins from the water bath and let them cool to room temperature, then refrigerate for at least 2 hours before serving.
  8. To serve, run a knife around the edge of the ramekin and invert onto a plate to release the flan.
