- Mushrooms (shiitake or button) - 150 grams, sliced
- Red bell pepper - 1 medium, diced
- Spinach - 100 grams, chopped
- Cherry tomatoes - 100 grams, halved
- Olive oil - 2 tablespoons
- Nutritional yeast - 2 tablespoons
- Soy sauce - 1 tablespoon
- Black pepper - to taste
- Fresh basil leaves - for garnish
Steps
- In a mixing bowl, combine rice flour, tapioca starch, water, and salt to create a smooth batter. Let it rest for 15 minutes.
- Heat a non-stick skillet over medium heat and lightly grease it with a little olive oil.
- Pour a thin layer of the batter into the skillet, swirling to coat the bottom evenly. Cook for about 2-3 minutes until the edges lift and the surface looks set.
- Carefully remove the cooked rice pancake from the skillet and place it on a plate. Repeat with the remaining batter, stacking the pancakes as you go.
- In the same skillet, add the remaining olive oil and sauté the mushrooms, red bell pepper, and spinach until tender, about 5-7 minutes. Season with soy sauce and black pepper.
- To assemble, place a cooked rice pancake on a plate, top it with the sautéed vegetables, and sprinkle with nutritional yeast.
- Add halved cherry tomatoes on top and garnish with fresh basil leaves. Serve warm.
