  • Mushrooms (shiitake or button) - 150 grams, sliced
  • Red bell pepper - 1 medium, diced
  • Spinach - 100 grams, chopped
  • Cherry tomatoes - 100 grams, halved
  • Olive oil - 2 tablespoons
  • Nutritional yeast - 2 tablespoons
  • Soy sauce - 1 tablespoon
  • Black pepper - to taste
  • Fresh basil leaves - for garnish

Steps

  1. In a mixing bowl, combine rice flour, tapioca starch, water, and salt to create a smooth batter. Let it rest for 15 minutes.
  2. Heat a non-stick skillet over medium heat and lightly grease it with a little olive oil.
  3. Pour a thin layer of the batter into the skillet, swirling to coat the bottom evenly. Cook for about 2-3 minutes until the edges lift and the surface looks set.
  4. Carefully remove the cooked rice pancake from the skillet and place it on a plate. Repeat with the remaining batter, stacking the pancakes as you go.
  5. In the same skillet, add the remaining olive oil and sauté the mushrooms, red bell pepper, and spinach until tender, about 5-7 minutes. Season with soy sauce and black pepper.
  6. To assemble, place a cooked rice pancake on a plate, top it with the sautéed vegetables, and sprinkle with nutritional yeast.
  7. Add halved cherry tomatoes on top and garnish with fresh basil leaves. Serve warm.
