- Rice flour - 100 grams
- Tapioca starch - 30 grams
- Water - 300 ml
- Ground beef (Halal) - 150 grams
- Onion (finely chopped) - 50 grams
- Garlic (minced) - 2 cloves
- Fish sauce - 1 tablespoon
- Soy sauce - 1 tablespoon
- Black pepper - 1/2 teaspoon
- Vegetable oil - 1 tablespoon
- Shallots (sliced) - 30 grams
- Fresh herbs (mint, coriander, and basil) - for garnish
- Chili sauce - for serving
Steps
- In a mixing bowl, combine rice flour, tapioca starch, and water to create a smooth batter. Let it rest for 15 minutes.
- In a skillet, heat vegetable oil over medium heat. Add chopped onion and minced garlic, sauté until fragrant and translucent.
- Add the ground beef to the skillet, breaking it apart with a spatula. Stir in fish sauce, soy sauce, and black pepper. Cook until the beef is browned and cooked through, about 5-7 minutes.
- In a separate pan, heat a little oil over medium heat. Pour in a ladle of the crepe batter, swirling to cover the base of the pan evenly. Cook for 2-3 minutes until the edges lift, then carefully flip and cook for another minute. Repeat until all batter is used, placing finished crepes on a plate.
- Preheat the oven to 180°C (350°F). On each crepe, place a spoonful of the beef mixture and roll them up.
- Place the rolled crepes on a baking tray. Top with sliced shallots and bake for 10-15 minutes until golden and crispy.
- Serve warm, garnished with fresh herbs and a side of chili sauce for dipping.
