  • Rice flour - 100 grams
  • Tapioca starch - 30 grams
  • Water - 300 ml
  • Ground pork - 100 grams
  • Shiitake mushrooms - 50 grams, finely chopped
  • Onion - 1 small, finely chopped
  • Fish sauce - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Vegetable oil - 1 teaspoon
  • Fresh herbs (mint, cilantro) - for garnish
  • Soy sauce - for dipping

Steps

  1. In a mixing bowl, combine rice flour, tapioca starch, and water to make a smooth batter. Let it rest for 30 minutes.
  2. In a skillet, heat vegetable oil over medium heat, then sauté onion until translucent. Add ground pork and cook until browned.
  3. Stir in chopped shiitake mushrooms, fish sauce, salt, and black pepper. Cook for an additional 5 minutes, then set aside to cool.
  4. Prepare a steamer and bring water to a boil. Lightly grease a flat plate or a tray that fits your steamer.
  5. Pour a thin layer of the batter onto the plate, tilting to spread evenly. Steam for 2-3 minutes until set.
  6. Remove the plate from the steamer, and place a small amount of the pork and mushroom filling in the center of the rice sheet. Roll it up carefully.
  7. Repeat the process with the remaining batter and filling. Serve warm, garnished with fresh herbs and soy sauce for dipping.
