- Glutinous rice - 200 grams
- Pork shoulder - 150 grams, minced
- Eggs - 2 large, beaten
- Shiitake mushrooms - 50 grams, rehydrated and chopped
- Green onions - 2 tablespoons, chopped
- Soy sauce - 1 tablespoon
- Fish sauce - 1 teaspoon
- Black pepper - 1 teaspoon
- Sesame oil - 1 tablespoon
- Cornstarch - 1 tablespoon
- Fresh cilantro - for garnish
- Vegetable oil - for frying
Steps
- Soak the glutinous rice in water for at least 4 hours or overnight, then drain.
- In a mixing bowl, combine the minced pork, shiitake mushrooms, green onions, soy sauce, fish sauce, black pepper, and cornstarch. Mix well and set aside.
- Heat a non-stick skillet over medium heat and add a tablespoon of vegetable oil.
- Add the drained glutinous rice to the skillet, flattening it to form a base about 1 cm thick, and cook for 5 minutes until slightly crispy.
- Pour the beaten eggs evenly over the rice base, followed by the pork mixture. Spread it out evenly.
- Cover the skillet and cook for another 15 minutes, or until the pork is cooked through and the rice is golden and crispy on the bottom.
- Drizzle sesame oil over the top and let it cook for another 2 minutes.
- Carefully slide the bánh chưng thịt onto a serving plate, garnish with fresh cilantro, and cut into wedges to serve.
