Ingredients

  • Glutinous rice - 200 grams
  • Pork shoulder - 150 grams, minced
  • Eggs - 2 large, beaten
  • Shiitake mushrooms - 50 grams, rehydrated and chopped
  • Green onions - 2 tablespoons, chopped
  • Soy sauce - 1 tablespoon
  • Fish sauce - 1 teaspoon
  • Black pepper - 1 teaspoon
  • Sesame oil - 1 tablespoon
  • Cornstarch - 1 tablespoon
  • Fresh cilantro - for garnish
  • Vegetable oil - for frying

Steps

  1. Soak the glutinous rice in water for at least 4 hours or overnight, then drain.
  2. In a mixing bowl, combine the minced pork, shiitake mushrooms, green onions, soy sauce, fish sauce, black pepper, and cornstarch. Mix well and set aside.
  3. Heat a non-stick skillet over medium heat and add a tablespoon of vegetable oil.
  4. Add the drained glutinous rice to the skillet, flattening it to form a base about 1 cm thick, and cook for 5 minutes until slightly crispy.
  5. Pour the beaten eggs evenly over the rice base, followed by the pork mixture. Spread it out evenly.
  6. Cover the skillet and cook for another 15 minutes, or until the pork is cooked through and the rice is golden and crispy on the bottom.
  7. Drizzle sesame oil over the top and let it cook for another 2 minutes.
  8. Carefully slide the bánh chưng thịt onto a serving plate, garnish with fresh cilantro, and cut into wedges to serve.
