- Glutinous rice - 200 grams
- Water - 400 ml
- Soy sauce - 1 tablespoon
- Olive oil - 1 tablespoon
- Garlic - 2 cloves, minced
- Mushrooms (shiitake or button) - 100 grams, sliced
- Bell pepper - 1 medium, chopped
- Spinach - 50 grams, fresh
- Cherry tomatoes - 100 grams, halved
- Vegan cheese - 100 grams, shredded
- Chopped green onions - 2 tablespoons
- Sesame seeds - 1 tablespoon
- Black pepper - to taste
- Fresh herbs (cilantro, basil) - for garnish
Steps
- Rinse the glutinous rice under cold water until the water runs clear. Soak the rice in water for at least 2 hours or overnight.
- Drain the soaked rice and place it in a pot with 400 ml of fresh water. Cook over medium heat until the water is absorbed and the rice is sticky, about 20 minutes. Stir occasionally to prevent sticking.
- Once cooked, remove from heat and let it cool for a few minutes. Then, press the rice into a pizza pan or baking sheet to form a crust, about 1-2 cm thick.
- Preheat your oven to 200°C (400°F).
- In a skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant. Then, add sliced mushrooms and bell pepper, cooking for an additional 5-7 minutes until softened.
- Add the fresh spinach and cook until wilted. Season with soy sauce, black pepper, and remove from heat.
- Spread the sautéed vegetable mixture evenly over the rice crust. Top with halved cherry tomatoes and sprinkle with vegan cheese.
- Bake in the preheated oven for 15-20 minutes or until the cheese is melted and the edges of the rice crust are slightly crispy.
- Remove from the oven, garnish with chopped green onions, sesame seeds, and fresh herbs before slicing.
