Ingredients

  • Glutinous rice - 200 grams
  • Water - 400 ml
  • Soy sauce - 1 tablespoon
  • Olive oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Mushrooms (shiitake or button) - 100 grams, sliced
  • Bell pepper - 1 medium, chopped
  • Spinach - 50 grams, fresh
  • Cherry tomatoes - 100 grams, halved
  • Vegan cheese - 100 grams, shredded
  • Chopped green onions - 2 tablespoons
  • Sesame seeds - 1 tablespoon
  • Black pepper - to taste
  • Fresh herbs (cilantro, basil) - for garnish

Steps

  1. Rinse the glutinous rice under cold water until the water runs clear. Soak the rice in water for at least 2 hours or overnight.
  2. Drain the soaked rice and place it in a pot with 400 ml of fresh water. Cook over medium heat until the water is absorbed and the rice is sticky, about 20 minutes. Stir occasionally to prevent sticking.
  3. Once cooked, remove from heat and let it cool for a few minutes. Then, press the rice into a pizza pan or baking sheet to form a crust, about 1-2 cm thick.
  4. Preheat your oven to 200°C (400°F).
  5. In a skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant. Then, add sliced mushrooms and bell pepper, cooking for an additional 5-7 minutes until softened.
  6. Add the fresh spinach and cook until wilted. Season with soy sauce, black pepper, and remove from heat.
  7. Spread the sautéed vegetable mixture evenly over the rice crust. Top with halved cherry tomatoes and sprinkle with vegan cheese.
  8. Bake in the preheated oven for 15-20 minutes or until the cheese is melted and the edges of the rice crust are slightly crispy.
  9. Remove from the oven, garnish with chopped green onions, sesame seeds, and fresh herbs before slicing.
