Ingredients

  • Glutinous rice - 150 grams
  • Mung beans (split) - 50 grams
  • Coconut milk - 100 ml
  • Sugar (coconut sugar preferred) - 30 grams
  • Salt - 1/4 teaspoon
  • Banana leaves - 2 large pieces
  • Water - 500 ml

Steps

  1. Soak the glutinous rice in water for at least 4 hours or overnight.
  2. Rinse the soaked rice and drain it well. Steam the rice for about 30 minutes until it is fully cooked and sticky.
  3. While the rice is steaming, soak the mung beans in warm water for 1 hour, then drain and steam them for about 20 minutes until soft.
  4. Mash the steamed mung beans with a fork or potato masher, then mix in the coconut milk, sugar, and salt until smooth.
  5. Prepare the banana leaves by briefly passing them over an open flame to make them pliable. Cut them into rectangles large enough to wrap the cake.
  6. Lay a piece of banana leaf on a flat surface, place a portion of the sticky rice (about 75 grams) in the center, then add a layer of the mung bean mixture (about 50 grams) on top, followed by another layer of rice (remaining 75 grams).
  7. Fold the banana leaf over the filling to create a square parcel and tie it securely with kitchen twine.
  8. Repeat the process for the second serving.
  9. In a large pot, bring water to a boil, then reduce to a simmer. Place the wrapped cakes in the pot and cover. Cook for approximately 60 minutes.
  10. Remove the cakes from the pot and allow them to cool for a few minutes before unwrapping and serving.
