  • Chicken broth - 500 ml
  • Fish sauce - 2 tablespoons
  • Lemongrass (chopped) - 1 stalk
  • Ginger (sliced) - 1 tablespoon
  • Garlic (minced) - 2 cloves
  • Shallots (sliced) - 2
  • Green onions (chopped) - 2 tablespoons
  • Cilantro (chopped) - 2 tablespoons
  • Lime - 1 (cut into wedges)
  • Chili pepper (sliced) - 1 (optional)
  • Salt - to taste
  • Pepper - to taste

Steps

  1. In a pot, bring the chicken broth to a gentle boil over medium heat.
  2. Add the chopped lemongrass, sliced ginger, minced garlic, and sliced shallots to the broth and simmer for 10 minutes to infuse the flavors.
  3. Strain the broth to remove the solids and return the clear broth to the pot.
  4. Add the Bánh Canh noodles to the broth and cook according to package instructions, usually about 5-7 minutes.
  5. Once the noodles are cooked, add the crab meat and fish sauce to the pot and stir gently to combine. Cook for an additional 2-3 minutes until the crab is heated through.
  6. Season with salt and pepper to taste.
  7. Ladle the soup into bowls, and garnish with chopped green onions, cilantro, and sliced chili pepper if desired.
  8. Serve with lime wedges on the side for squeezing over the soup.
