- Shallots (sliced) - 2
- Green onions (chopped) - 2 tablespoons
- Cilantro (chopped) - 2 tablespoons
- Lime - 1 (cut into wedges)
- Chili pepper (sliced) - 1 (optional)
- Salt - to taste

Steps
- In a pot, bring the chicken broth to a gentle boil over medium heat.
- Add the chopped lemongrass, sliced ginger, minced garlic, and sliced shallots to the broth and simmer for 10 minutes to infuse the flavors.
- Strain the broth to remove the solids and return the clear broth to the pot.
- Add the Bánh Canh noodles to the broth and cook according to package instructions, usually about 5-7 minutes.
- Once the noodles are cooked, add the crab meat and fish sauce to the pot and stir gently to combine. Cook for an additional 2-3 minutes until the crab is heated through.
- Season with salt and pepper to taste.
- Ladle the soup into bowls, and garnish with chopped green onions, cilantro, and sliced chili pepper if desired.
- Serve with lime wedges on the side for squeezing over the soup.
