  • Green onions (sliced) - 2 tablespoons
  • Lime wedges - 2

Steps

  1. In a pot, bring the chicken broth to a boil and add the chopped shallots and minced garlic. Sauté for 2-3 minutes until fragrant.
  2. Add the cleaned crab to the pot, along with turmeric powder, and simmer for 10-15 minutes until the crab is cooked through.
  3. Remove the crab and set it aside to cool slightly. Strain the broth to remove solids and return the liquid to the pot.
  4. Cook the rice noodles in a separate pot according to package instructions, then drain and set aside.
  5. Once the crab is cool enough to handle, crack the shells and extract the meat, discarding the shells.
  6. Return the broth to a gentle simmer, add fish sauce, salt, and black pepper to taste. Stir in the cooked noodles and crab meat.
  7. Serve the soup hot, garnished with chopped cilantro, sliced green onions, and chili pepper if desired. Add lime wedges on the side.
