Ingredients

  • Crab meat - 200 grams
  • Tapioca flour - 100 grams
  • Almond flour - 50 grams
  • Chicken broth - 500 ml
  • Coconut milk - 100 ml
  • Garlic - 2 cloves, minced
  • Shallots - 1, finely chopped
  • Fish sauce - 1 tablespoon
  • Lime - 1, juiced
  • Green onions - 2, chopped
  • Cilantro - 2 tablespoons, chopped
  • Red chili - 1, sliced (optional)
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a mixing bowl, combine tapioca flour and almond flour. Gradually add 100 ml of water until a dough forms. Knead for a few minutes, then let it rest for 10 minutes.
  2. Roll the dough into thin ropes and cut them into bite-sized pieces to form the 'noodles'. Set aside.
  3. In a large pot, heat a splash of oil over medium heat. Add minced garlic and chopped shallots, sautéing until fragrant.
  4. Pour in the chicken broth and bring to a simmer. Add the crab meat, coconut milk, fish sauce, lime juice, salt, and pepper. Let it simmer for 5 minutes.
  5. Gently add the prepared 'noodles' to the pot and cook for an additional 5 minutes until they float and are cooked through.
  6. Serve hot, garnished with chopped green onions, cilantro, and sliced red chili if desired.
