Ingredients
- Rice flour - 100 grams
- Tapioca flour - 30 grams
- Water - 500 ml
- Shrimp, peeled and deveined - 200 grams
- Shallots, minced - 2 tablespoons
- Garlic, minced - 1 tablespoon
- Fish sauce - 1 tablespoon
- Vegetable oil - 2 tablespoons
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Chopped scallions - 2 tablespoons
- Cilantro, for garnish - a handful
Steps
- In a mixing bowl, combine the rice flour, tapioca flour, and salt. Gradually add the water while whisking until the mixture is smooth and free of lumps.
- In a pan, heat 1 tablespoon of vegetable oil over medium heat. Add the minced shallots and garlic, and sauté until fragrant and golden brown.
- Add the shrimp to the pan and cook until they turn pink, about 3-4 minutes. Stir in the fish sauce, black pepper, and chopped scallions. Remove from heat.
- Prepare a steamer and bring water to a boil. Pour half of the rice flour mixture into a greased steaming dish or pan, spreading it evenly.
- Steam the first layer for about 10 minutes until set. Remove from the steamer and spread the shrimp mixture evenly over the top.
- Pour the remaining rice flour mixture over the shrimp layer, covering it completely. Return the dish to the steamer and steam for another 15-20 minutes until fully cooked and set.
- Once done, remove from the steamer and let it cool slightly before slicing. Serve warm, garnished with fresh cilantro.
