Ingredients

  • Rice flour - 150g
  • Tapioca starch - 50g
  • Water - 400ml
  • Salt - 1/2 tsp
  • Vegetable oil - 1 tbsp
  • Mushrooms (sliced) - 100g
  • Bell pepper (sliced) - 1 medium
  • Cherry tomatoes (halved) - 100g
  • Spinach - 50g
  • Vegan cheese - 100g
  • Fresh basil - a handful
  • Soy sauce - 1 tbsp
  • Black pepper - to taste

Steps

  1. In a mixing bowl, combine rice flour, tapioca starch, water, and salt. Whisk until smooth to create the batter.
  2. Heat a non-stick skillet over medium heat and add 1/2 tbsp of vegetable oil.
  3. Pour half of the batter into the skillet, swirling to create an even layer. Cook for about 5-7 minutes until the edges lift and the surface is set.
  4. Carefully flip the crust and cook for another 3-4 minutes until golden brown. Repeat with the remaining batter to make a second crust.
  5. In a separate pan, heat the remaining oil and sauté mushrooms, bell pepper, and cherry tomatoes for about 5 minutes until softened. Add spinach and cook until wilted. Season with soy sauce and black pepper.
  6. Preheat the oven to 200°C (392°F).
  7. Place one crust on a baking sheet, spread half of the sautéed vegetable mixture over it, and sprinkle half of the vegan cheese on top. Repeat with the second crust.
  8. Bake for 10-12 minutes until the cheese is melted and bubbly.
  9. Remove from the oven, garnish with fresh basil, slice, and serve hot.
