Ingredients

  • Rice flour - 100 grams
  • Tapioca starch - 50 grams
  • Water - 400 milliliters
  • Chicken breast, cooked and shredded - 150 grams
  • Eggs - 2 large
  • Green onions, chopped - 30 grams
  • Mushrooms, finely chopped - 50 grams
  • Fish sauce - 1 tablespoon
  • Black pepper - 1/2 teaspoon
  • Salt - 1/4 teaspoon
  • Vegetable oil - 2 tablespoons
  • Cheese (mozzarella or cheddar), shredded - 100 grams

Steps

  1. Preheat the oven to 200°C (390°F).
  2. In a large mixing bowl, combine rice flour, tapioca starch, and water. Mix well to form a smooth batter.
  3. Add the cooked shredded chicken, chopped green onions, chopped mushrooms, fish sauce, black pepper, and salt to the batter. Mix until well combined.
  4. In a separate bowl, whisk the eggs and then fold them into the batter mixture.
  5. Grease a baking dish with vegetable oil, then pour the batter into the dish evenly.
  6. Sprinkle the shredded cheese on top of the batter.
  7. Bake in the preheated oven for 20-25 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.
  8. Remove from the oven and let it cool slightly before cutting into squares. Serve warm.
