- Chicken breast, cooked and shredded - 150 grams
- Eggs - 2 large
- Green onions, chopped - 30 grams
- Mushrooms, finely chopped - 50 grams
- Fish sauce - 1 tablespoon
- Black pepper - 1/2 teaspoon
- Salt - 1/4 teaspoon
- Vegetable oil - 2 tablespoons
- Cheese (mozzarella or cheddar), shredded - 100 grams
Steps
- Preheat the oven to 200°C (390°F).
- In a large mixing bowl, combine rice flour, tapioca starch, and water. Mix well to form a smooth batter.
- Add the cooked shredded chicken, chopped green onions, chopped mushrooms, fish sauce, black pepper, and salt to the batter. Mix until well combined.
- In a separate bowl, whisk the eggs and then fold them into the batter mixture.
- Grease a baking dish with vegetable oil, then pour the batter into the dish evenly.
- Sprinkle the shredded cheese on top of the batter.
- Bake in the preheated oven for 20-25 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.
- Remove from the oven and let it cool slightly before cutting into squares. Serve warm.
