Ingredients
- Rice flour - 100g
- Mung beans (dried) - 50g
- Coconut milk - 200ml
- Water - 300ml
- Sugar - 50g
- Salt - 1/4 tsp
- Peanuts (crushed) - 30g
- Sesame seeds (optional) - 1 tbsp
Steps
- Soak mung beans in water for at least 2 hours or overnight.
- Drain and steam the soaked mung beans until soft, about 20 minutes.
- In a blender, combine the steamed mung beans with 100ml of coconut milk and blend until smooth.
- In a separate bowl, mix rice flour, 200ml of water, sugar, and salt until there are no lumps.
- In a saucepan, heat the rice flour mixture over medium heat, stirring constantly until it thickens (about 5-7 minutes).
- Once thick, pour half of the mixture into a greased mold or dish, smoothing the top.
- Spread the mung bean paste evenly on top of the first layer.
- Pour the remaining rice flour mixture over the mung bean layer, smoothing it out again.
- Cover the mold with a cloth and steam for 20-25 minutes until set.
- Let it cool slightly, then cut into pieces and serve topped with crushed peanuts and sesame seeds if desired.
