Bánh Đúc Lạc

Ingredients

  • Rice flour - 100g
  • Mung beans (dried) - 50g
  • Coconut milk - 200ml
  • Water - 300ml
  • Sugar - 50g
  • Salt - 1/4 tsp
  • Peanuts (crushed) - 30g
  • Sesame seeds (optional) - 1 tbsp

Steps

  1. Soak mung beans in water for at least 2 hours or overnight.
  2. Drain and steam the soaked mung beans until soft, about 20 minutes.
  3. In a blender, combine the steamed mung beans with 100ml of coconut milk and blend until smooth.
  4. In a separate bowl, mix rice flour, 200ml of water, sugar, and salt until there are no lumps.
  5. In a saucepan, heat the rice flour mixture over medium heat, stirring constantly until it thickens (about 5-7 minutes).
  6. Once thick, pour half of the mixture into a greased mold or dish, smoothing the top.
  7. Spread the mung bean paste evenly on top of the first layer.
  8. Pour the remaining rice flour mixture over the mung bean layer, smoothing it out again.
  9. Cover the mold with a cloth and steam for 20-25 minutes until set.
  10. Let it cool slightly, then cut into pieces and serve topped with crushed peanuts and sesame seeds if desired.
