- Psyllium husk - 1 tablespoon
- Baking powder - 1 teaspoon
- Salt - 1/2 teaspoon
- Water - 300ml
- Coconut milk - 100ml
- Egg - 1 large
- Chopped green onions - 2 tablespoons
- Cooked shredded chicken or tofu - 100g
- Soy sauce (or tamari for gluten-free) - 1 tablespoon
- Sesame oil - 1 teaspoon
Steps
- In a mixing bowl, combine almond flour, coconut flour, psyllium husk, baking powder, and salt.
- In a separate bowl, whisk together water, coconut milk, and the egg until well combined.
- Gradually add the wet mixture to the dry ingredients, stirring until a smooth batter forms.
- Let the batter rest for 10 minutes to allow the psyllium husk to absorb moisture and thicken the batter.
- Meanwhile, prepare a steamer by filling it with water and bringing it to a boil.
- Grease a heatproof dish or cake pan with a little oil and pour the batter into it, smoothing the top.
- Place the dish in the steamer and cover with a lid. Steam for about 20 minutes or until the cake is set and firm to the touch.
- Once cooked, remove the cake from the steamer and let it cool slightly before slicing.
- Serve slices topped with chopped green onions, shredded chicken or tofu, a drizzle of soy sauce, and a sprinkle of sesame oil.
