Ingredients

  • Coconut flour - 30g
  • Psyllium husk - 1 tablespoon
  • Baking powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Water - 300ml
  • Coconut milk - 100ml
  • Egg - 1 large
  • Chopped green onions - 2 tablespoons
  • Cooked shredded chicken or tofu - 100g
  • Soy sauce (or tamari for gluten-free) - 1 tablespoon
  • Sesame oil - 1 teaspoon

Steps

  1. In a mixing bowl, combine almond flour, coconut flour, psyllium husk, baking powder, and salt.
  2. In a separate bowl, whisk together water, coconut milk, and the egg until well combined.
  3. Gradually add the wet mixture to the dry ingredients, stirring until a smooth batter forms.
  4. Let the batter rest for 10 minutes to allow the psyllium husk to absorb moisture and thicken the batter.
  5. Meanwhile, prepare a steamer by filling it with water and bringing it to a boil.
  6. Grease a heatproof dish or cake pan with a little oil and pour the batter into it, smoothing the top.
  7. Place the dish in the steamer and cover with a lid. Steam for about 20 minutes or until the cake is set and firm to the touch.
  8. Once cooked, remove the cake from the steamer and let it cool slightly before slicing.
  9. Serve slices topped with chopped green onions, shredded chicken or tofu, a drizzle of soy sauce, and a sprinkle of sesame oil.
