- Rice flour - 100 grams
- Tapioca starch - 30 grams
- Coconut milk - 200 milliliters
- Palm sugar (thốt nốt) - 80 grams
- Yeast - 1 teaspoon
- Warm water - 50 milliliters
- Salt - a pinch
- Vegetable oil - for greasing
Steps
- In a small bowl, dissolve the palm sugar in warm water and add the yeast. Let it sit for about 10 minutes until frothy.
- In a large mixing bowl, combine the rice flour, tapioca starch, and a pinch of salt.
- Add the frothy yeast mixture and coconut milk to the flour mixture, stirring until smooth and well combined.
- Cover the bowl with a clean cloth and let the batter rise in a warm place for about 30 minutes.
- Preheat your oven to 180°C (350°F). Grease a small baking dish or individual ramekins with vegetable oil.
- Pour the batter into the prepared dish or ramekins, filling them about 2/3 full.
- Bake in the preheated oven for about 25 minutes, or until the top is set and slightly golden.
- Allow to cool for a few minutes before serving. Enjoy warm or at room temperature.
