  • Soy sauce - 1 tablespoon
  • Black pepper - 1/2 teaspoon
  • Cooking oil - 2 tablespoons
  • Sliced bell pepper - 100 grams
  • Sliced mushrooms - 100 grams

Steps

  1. In a mixing bowl, combine rice flour, tapioca starch, warm water, egg, salt, and sugar. Mix until smooth and let rest for 10 minutes.
  2. In a skillet, heat 1 tablespoon of cooking oil over medium heat. Add ground chicken, soy sauce, black pepper, green onions, and cilantro. Cook until the chicken is browned and fully cooked, about 5-7 minutes.
  3. In a separate pan, heat the remaining 1 tablespoon of oil over medium heat. Pour half of the batter into the pan, swirling to create an even layer.
  4. Cook for about 2-3 minutes until the edges start to lift, then add half of the cooked chicken mixture, bell pepper, and mushrooms evenly on top.
  5. Cover the pan and cook for an additional 5 minutes, until the toppings are heated through and the base is set.
  6. Remove from heat, slice into wedges, and repeat the process with the remaining batter and toppings.
  7. Serve warm, garnished with additional cilantro and green onions if desired.
