- Sliced bell pepper - 100 grams
- Sliced mushrooms - 100 grams
Steps
- In a mixing bowl, combine rice flour, tapioca starch, warm water, egg, salt, and sugar. Mix until smooth and let rest for 10 minutes.
- In a skillet, heat 1 tablespoon of cooking oil over medium heat. Add ground chicken, soy sauce, black pepper, green onions, and cilantro. Cook until the chicken is browned and fully cooked, about 5-7 minutes.
- In a separate pan, heat the remaining 1 tablespoon of oil over medium heat. Pour half of the batter into the pan, swirling to create an even layer.
- Cook for about 2-3 minutes until the edges start to lift, then add half of the cooked chicken mixture, bell pepper, and mushrooms evenly on top.
- Cover the pan and cook for an additional 5 minutes, until the toppings are heated through and the base is set.
- Remove from heat, slice into wedges, and repeat the process with the remaining batter and toppings.
- Serve warm, garnished with additional cilantro and green onions if desired.
