Ingredients

  • Rice flour - 150 grams
  • Water - 300 milliliters
  • Salt - 1/2 teaspoon
  • Vegetable oil - 2 tablespoons
  • Button mushrooms - 100 grams, sliced
  • Bell pepper - 1 medium, diced
  • Carrot - 1 medium, julienned
  • Green onion - 2, chopped
  • Soy sauce - 1 tablespoon
  • Black pepper - 1/4 teaspoon
  • Fresh cilantro - 2 tablespoons, chopped
  • Chili sauce - for serving (optional)

Steps

  1. In a mixing bowl, combine rice flour, water, and salt. Stir until smooth and let it rest for 10 minutes.
  2. Heat 1 tablespoon of vegetable oil in a non-stick skillet over medium heat. Add sliced mushrooms and sauté for 3-4 minutes until softened.
  3. Add diced bell pepper and julienned carrot to the skillet. Cook for an additional 3-4 minutes until vegetables are tender.
  4. Stir in chopped green onions, soy sauce, and black pepper. Mix well and remove from heat. Set aside.
  5. In the same skillet, add the remaining tablespoon of vegetable oil and pour in the rice flour mixture, spreading it evenly. Cook for 5-7 minutes until the bottom is golden and set.
  6. Carefully flip the rice flour base using a large plate, and cook the other side for another 5-7 minutes until golden.
  7. Once both sides are crispy, top the base with the sautéed vegetable mixture and sprinkle with fresh cilantro.
  8. Cut into wedges and serve warm, with chili sauce on the side if desired.
