- Rice flour - 150 grams
- Water - 300 milliliters
- Salt - 1/2 teaspoon
- Vegetable oil - 2 tablespoons
- Button mushrooms - 100 grams, sliced
- Bell pepper - 1 medium, diced
- Carrot - 1 medium, julienned
- Green onion - 2, chopped
- Soy sauce - 1 tablespoon
- Black pepper - 1/4 teaspoon
- Fresh cilantro - 2 tablespoons, chopped
- Chili sauce - for serving (optional)
Steps
- In a mixing bowl, combine rice flour, water, and salt. Stir until smooth and let it rest for 10 minutes.
- Heat 1 tablespoon of vegetable oil in a non-stick skillet over medium heat. Add sliced mushrooms and sauté for 3-4 minutes until softened.
- Add diced bell pepper and julienned carrot to the skillet. Cook for an additional 3-4 minutes until vegetables are tender.
- Stir in chopped green onions, soy sauce, and black pepper. Mix well and remove from heat. Set aside.
- In the same skillet, add the remaining tablespoon of vegetable oil and pour in the rice flour mixture, spreading it evenly. Cook for 5-7 minutes until the bottom is golden and set.
- Carefully flip the rice flour base using a large plate, and cook the other side for another 5-7 minutes until golden.
- Once both sides are crispy, top the base with the sautéed vegetable mixture and sprinkle with fresh cilantro.
- Cut into wedges and serve warm, with chili sauce on the side if desired.
