- Coconut flour - 30 grams
- Coconut milk - 200 ml
- Erythritol - 30 grams
- Grated coconut (unsweetened) - 50 grams
- Vanilla extract - 1 teaspoon
- Salt - a pinch
- Water - 50 ml
Steps
- In a mixing bowl, combine almond flour, coconut flour, erythritol, and salt.
- Add coconut milk and vanilla extract to the dry ingredients, and mix until a dough forms.
- Cover the dough with a damp cloth and let it rest for 10 minutes.
- In another bowl, mix grated coconut with a tablespoon of erythritol and a little water to create the filling.
- Divide the dough into small balls (about 25 grams each) and flatten them into discs.
- Place a teaspoon of the coconut filling in the center of each disc and fold the dough around it, sealing the edges.
- Bring a pot of water to a boil and carefully drop the dumplings in. Cook for about 10-12 minutes until they float to the top.
- Remove the dumplings with a slotted spoon and let them cool slightly before serving.
