Ingredients

  • Almond flour - 100 grams
  • Coconut flour - 30 grams
  • Coconut milk - 200 ml
  • Erythritol - 30 grams
  • Grated coconut (unsweetened) - 50 grams
  • Vanilla extract - 1 teaspoon
  • Salt - a pinch
  • Water - 50 ml

Steps

  1. In a mixing bowl, combine almond flour, coconut flour, erythritol, and salt.
  2. Add coconut milk and vanilla extract to the dry ingredients, and mix until a dough forms.
  3. Cover the dough with a damp cloth and let it rest for 10 minutes.
  4. In another bowl, mix grated coconut with a tablespoon of erythritol and a little water to create the filling.
  5. Divide the dough into small balls (about 25 grams each) and flatten them into discs.
  6. Place a teaspoon of the coconut filling in the center of each disc and fold the dough around it, sealing the edges.
  7. Bring a pot of water to a boil and carefully drop the dumplings in. Cook for about 10-12 minutes until they float to the top.
  8. Remove the dumplings with a slotted spoon and let them cool slightly before serving.
