- Water - 200 milliliters
- Coconut milk - 100 milliliters
- Sugar - 50 grams
- Salt - 1/4 teaspoon
- Sesame seeds - 2 tablespoons
- Banana (sliced) - 1 medium
- Vegetable oil - for greasing
Steps
- In a mixing bowl, combine glutinous rice flour, sugar, salt, coconut milk, and water. Mix until the batter is smooth and free of lumps.
- Let the batter rest for about 10 minutes to allow the flour to hydrate.
- Preheat a non-stick grill or a frying pan over medium heat and lightly grease it with vegetable oil.
- Pour a ladleful of batter onto the grill, making a round shape about 1 cm thick. Place a few slices of banana on top of the batter.
- Cook for about 5-7 minutes until the bottom is golden brown, then carefully flip the cake over and cook for another 5-7 minutes until both sides are golden and the cake is cooked through.
- Repeat the process with the remaining batter and banana slices.
- Once all cakes are cooked, sprinkle the top with sesame seeds before serving.
