  • Water - 150 ml
  • Salt - 1/2 teaspoon
  • Shrimp, peeled and deveined - 150 grams
  • Garlic, minced - 1 clove
  • Shallots, finely chopped - 1 medium
  • Fish sauce - 1 tablespoon
  • Black pepper - 1/4 teaspoon
  • Vegetable oil - 1 tablespoon
  • Green onions, chopped - 2 tablespoons
  • Cilantro, chopped - 1 tablespoon

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a large bowl, mix the tapioca flour, water, and salt to form a smooth dough. Let it rest for 15 minutes.
  3. In a skillet, heat the vegetable oil over medium heat. Add minced garlic and chopped shallots, sautéing until fragrant.
  4. Add the shrimp to the skillet, seasoning with fish sauce and black pepper. Cook until the shrimp turn pink, about 3-5 minutes. Stir in chopped green onions and cilantro before removing from heat.
  5. Divide the tapioca dough into small portions, flatten each portion to create a disc.
  6. Place a spoonful of the shrimp mixture in the center of each disc and fold the dough over to form a half-moon shape, sealing the edges tightly.
  7. Arrange the dumplings on a baking tray lined with parchment paper and bake for 20-25 minutes, or until the surface is slightly golden.
  8. Serve warm with a dipping sauce of your choice.
