- Mushrooms - 100 grams, sliced
- Vegan cheese - 80 grams, shredded
- Fresh basil - a handful, chopped
- Garlic powder - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Vegan pesto - 2 tablespoons
Steps
- In a mixing bowl, combine tapioca flour, salt, and water. Mix until a smooth dough forms.
- Knead the dough for about 5 minutes until it becomes elastic. Cover with a damp cloth and let it rest for 10 minutes.
- Preheat a non-stick skillet over medium heat and add olive oil.
- Divide the dough into 4 equal portions and flatten each portion into a round shape about 1 cm thick.
- Place the flattened dough in the skillet, cooking each side for 3-4 minutes until slightly golden.
- Remove the cooked bases and set aside on a plate.
- In the same skillet, add the cherry tomatoes, bell pepper, mushrooms, and spinach. Sauté for 5-7 minutes until the vegetables are tender.
- Spread 1 tablespoon of vegan pesto on each dough base, then top with the sautéed vegetables and shredded vegan cheese.
- Sprinkle garlic powder, black pepper, and chopped basil on top.
- Cover the skillet and cook on low heat for an additional 5 minutes until the cheese melts and the base is heated through.
- Remove from heat, slice, and serve warm.
