  • Cherry tomatoes - 100 grams, halved
  • Bell pepper - 1 medium, diced
  • Spinach - 50 grams, chopped
  • Mushrooms - 100 grams, sliced
  • Vegan cheese - 80 grams, shredded
  • Fresh basil - a handful, chopped
  • Garlic powder - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Vegan pesto - 2 tablespoons

Steps

  1. In a mixing bowl, combine tapioca flour, salt, and water. Mix until a smooth dough forms.
  2. Knead the dough for about 5 minutes until it becomes elastic. Cover with a damp cloth and let it rest for 10 minutes.
  3. Preheat a non-stick skillet over medium heat and add olive oil.
  4. Divide the dough into 4 equal portions and flatten each portion into a round shape about 1 cm thick.
  5. Place the flattened dough in the skillet, cooking each side for 3-4 minutes until slightly golden.
  6. Remove the cooked bases and set aside on a plate.
  7. In the same skillet, add the cherry tomatoes, bell pepper, mushrooms, and spinach. Sauté for 5-7 minutes until the vegetables are tender.
  8. Spread 1 tablespoon of vegan pesto on each dough base, then top with the sautéed vegetables and shredded vegan cheese.
  9. Sprinkle garlic powder, black pepper, and chopped basil on top.
  10. Cover the skillet and cook on low heat for an additional 5 minutes until the cheese melts and the base is heated through.
  11. Remove from heat, slice, and serve warm.
