  • Shrimp (peeled and deveined) - 100 grams
  • Shallots (finely chopped) - 1 medium
  • Garlic (minced) - 2 cloves
  • Fish sauce - 1 tablespoon
  • Black pepper - 1/2 teaspoon
  • Vegetable oil - 1 tablespoon
  • Lettuce leaves - 4 leaves
  • Fresh herbs (mint, cilantro) - a handful
  • Chili sauce (for serving) - to taste

Steps

  1. In a bowl, mix tapioca flour with warm water until a smooth dough forms. Cover and let it rest for 15 minutes.
  2. In a skillet, heat vegetable oil over medium heat. Add chopped shallots and minced garlic, sauté until fragrant.
  3. Add shrimp to the skillet, season with fish sauce and black pepper, and cook until shrimp is pink and cooked through, about 3-4 minutes. Set aside to cool.
  4. Divide the dough into small balls (about 30 grams each). Flatten each ball into a disc in your palm.
  5. Place a teaspoon of the shrimp filling in the center of each disc, fold over to create a half-moon shape, and pinch the edges to seal.
  6. Bring a pot of water to a boil, then gently add the dumplings. Cook until they float to the surface, about 5-7 minutes.
  7. Using a slotted spoon, remove the dumplings and place them on a plate. Serve with lettuce leaves, fresh herbs, and chili sauce on the side.
